Taste or function? How to build a herbal tea people actually finish
Herbal tea formulation: How to Balance Taste and wellness | Anantah Foods
Many Herbal teas either taste good or do something, rarely both. here is how experienced R&D helps brands get a blend that works and tastes great
We have all had that cup. The label promises calm, or digestion, or glow, and the tea tastes like warm lawn clippings. You drink half and never buy it again. A blend nobody finishes does not help anyone, however good the ingredients are.
With 20+ years of R&D experience behind our team, the lesson we keep returning to is simple: taste and function are not opposites. You have to design for both from day one.
Tea Base
Start with the Base
Every blend needs a backbone. It might be green tea, black tea or a mild herb like chamomile or tulsi. The base decides the body of the cup and how much room you have left for stronger ingredients.
Ingredient Selection
Give Each Ingredient a Job
It helps to ask what each ingredient is there to do. Each ingredient should contribute to the aroma, body, brightness, colour or intended purpose of the blend. If an ingredient has no job, take it out. Crowded blends usually taste muddy.
- Aroma: rose petals, lavender, jasmine
- Body and warmth: cinnamon, cardamom, ginger
- Brightness and tang: hibiscus, lemon
- Colour: blue pea flower, which gives a natural blue
- Function: the wellness ingredients your customer is actually buying the tea for
Flavour Balance
Watch the Bitter Ones
Some of the most useful herbs are also the strongest tasting. The trick is rarely removing them. It is balancing them with something gentle, such as fennel, mint, a touch of stevia or a floral note, and by getting the ratio right. Moving an ingredient by a small amount can change the whole cup, which is why we test in small batches.
- Balance strong herbs with fennel
- Use mint for a gentler flavour
- Consider a floral note
- Test ingredient ratios in small batches
Brewing Tests
Brew It the Way Your Customer Will
A tea that tastes perfect at one steep time can turn harsh at another. Test your blend at different water temperatures and steep times, with and without sweetener, and with milk or lemon if people might add them. Blue pea flower, for example, turns purple when you add lemon, which can be a lovely feature if you plan for it.
- Test different water temperatures
- Test different steeping times
- Try the blend with and without sweetener
- Test with milk or lemon if customers may add them
Tea Bag Selection
The Tea Bag Is Part of the Recipe
Pyramid tea bags give whole leaves and flowers room to open up, which usually means a fuller flavour than a flat bag of dust. It is one reason we specialise in them. Choose the bag material with your customer in mind, since we offer biodegradable options.
- Choose a tea bag that gives whole leaves and flowers room to open
- Consider biodegradable tea bag material options
Product Claims
Be Careful with Claims
The words on your pack are regulated, and rules differ by country. Describe what is in the tea and the experience of drinking it, and avoid promising to treat or cure anything. When you are unsure, check the rules for the market you are selling in before you print.
- Describe the ingredients accurately
- Describe the drinking experience
- Avoid promising to treat or cure diseases
- Check the rules in your target market before printing
